If you installed amavisd-new with a package manager (e.g. from an
RPM/DEB/etc.), be sure to also remove it from the package manager's
database, otherwise it will be auto-updated and may overwrite your
amavisd-maia link.

There's nothing apparently wrong with the log excerpt you posted, so if
you're ending up with a mail loop, the problem lies either in your
sendmail configuration or in your amavisd.conf file.  Since you say that
amavisd-new (in dual-sendmail, not milter) works fine between your
MTA-RX and MTA-TX, everything now points to something in your Maia
amavisd.conf.  Specifically, check $forward_method, which controls where
amavisd-maia routes its mail downstream.  From the look of your
"Deferred" messages, it looks like you may be pointing to your MTA-RX
instead of your MTA-TX, here.
